I wasn’t sure what else to call these, they look like falafel balls but they’re not made from chickpeas and they’re not deep fried.  These little bites are raw, vegan, and a breeze to make.  You can see in my picture I wrapped them in lettuce leaves with some avocado and salsa verde.  You could try dipping them in hummus, or putting them with some whole grains, get creative!

This recipe calls for flax meal, which are ground up flax seeds.  Flax seeds are a great source of Omega 3 Fatty Acids, a type of healthy fat you can read more on here.  Flax seeds spoil quickly and flax meal goes even faster, so keep it in the freezer until you’re ready to use it.

  • ½ cup raw almonds
  • ¼ cup raw pumpkin seeds
  • ¼ cup flax meal
  • 2 Tbs balsamic vinegar
  • 2 Tbs olive oil
  • 1 clove garlic

Place all ingredients in food process and blend until it resembles a chunky paste.  Roll mixture into 2” balls and store in refrigerator.
